Vegan Baking Tips: Egg Replacement and Oil

During an AmeriCorps icebreaker, I matched my desire to learn vegan baking with someone who knew how. Who say’s icebreakers are worthless (well, I sometimes do). I got the following two tips:

Egg Substitute: Use an amount of water equal to an egg (maybe ~1/4 cup) and mix in tablespoon of ground flax-seed

Best Oil: Coconut Oil is the best oil to use for moistness and tastiness. Of course, it’s really bad for you, but who cares.

You should let the ground flax seed soak in the water for a while, it will get more eggy as it soaks.

Coconut oil is actually really good for you, so make sure you use the extra virgin coconut oil. Back in the 1950’s people believed that the saturated fats (coconut oil and butter) were bad for you. That is no longer the truth. The fats found in coconut oil is much easier for your body to burn. Unlike the polyunsaturated fats, coconut is turned to energy immediately and not stored in the fat cells. Its been used by athletes for ages and is also great for your skin!
